Melisa Clayton is the chef at Gusto, a fabulous little cafe in Hatfield Street (Gardens, Cape Town). The cafe’s emphasis on healthy, gluten-free, delicious food really sets it apart, and there’s plenty of indulgent homemade goodies too. I popped in to chat to Melisa about wedding catering, and snapped a few pics while I was there.

We concentrate a lot on attention to detail, and offer up really authentic food.
3. Why did you choose to focus on weddings??
Weddings are a wonderful celebration, and people these days express themselves through their choice of wedding fare. We love to be part of that.
4. What advice do you have for brides who are planning their weddings??
I am busy planning mine and I would say it’s really important to take the time to work out what really works for you and your partner on your special day. Meet with your caterer and talk about what you love and don’t love (from weddings you’ve been to) and make sure you’re getting the flavours that will really complement your day.

Everyone is there to celebrate, and all the different people in your life come together.
7. My number one tip for wedding catering is…?
Work out the rhythm of your wedding, and what kind of food you really want.
8. My favourite wedding trend with food is…
Depending on the wedding, to serve food in a more relaxed way than the formal sit-down dinner: a mixture of canapes, anti pasti, sitting wherever you like, four main courses to choose from, late night snacks for the late revellers. Really catering to the couple.
